Sakura Ping Pi

Package of ingredients to follow step by step
  • LURPAK Butter 15g
  • HOI Sakura Ping Pi Flour 150g
  • FL HK White Lotus Low Sugar Paste 335g
  • Koh Fan
  • Premium Sunflower Seed 10-20g
  • Premium Pumpkin Seed 10-20g
  • Premium Melon Seed (AA) 10-20g

Method

  1. Bake sunflower seed, melon seed & pumpkin seed at 170°C for 3-5 minutes.
  2. Add hot water 95-100°C 150g into mixer. Add in butter 15g. Stir until well mix. Add in Sakura ping pi flour 150g. Beat well until smooth dough form.
  3. Wrap the dough with catering film & chill at 0°C – 5°C for 1 hour.
  4. Mix white lotus paste, sunflower seed, pumpkin seed and melon seed together. Knead until well mix.
  5. Scale the ping pi dough 50g each and shape it round.
  6. Dust a Koh Fan on the dough and mould, wrap the filling with dough & shape into ball.
  7. Use mooncake mould 65g for this recipe.
  8. Put the dough inside the plunger & press down until you feel resistance.
  9. Keep the mooncake chill for better taste. Enjoys.
