Matcha Tea Spiral Flaky Mooncake

Package of ingredients to follow step by step

DOUGH 1:

  • Cookies Flour 200g
  • Castor Sugar 20g
  • Salt 4g
  • Paysan Breton Unsalted Butter 80g
  • Water 100g

DOUGH 2:

  • Cookies Flour 110g
  • Paysan Unsalted Butter 100g
  • Matcha Powder 10g

MOONCAKE PASTE:

  • FL Jasmine Lotus Paste 400g
  • Melon Seed (guaji) 20g

* 22g – 25g paste half salted egg yolk
Bake 180°C for 20-25 minits

Method

PREPARE DOUGH 1:

  1. In a mixing bowl, combine cookies flour, sugar, and salt.
  2. Cut in unsalted butter until the mixture resembles coarse crumbs.
  3. Gradually add water, mixing until a smooth dough forms.
  4. Cover and let it rest for 20 minutes.

PREPARE DOUGH 2:

  1. In another bowl, mix cookies flour and Matcha powder.
  2. Add butter and mix until a smooth dough forms.
  3. Cover and let it rest for 20 minutes.
  4. Filling Preparation:Mix the mooncake paste with melon seeds evenly.
    Divide the paste into 22g-25g portions and roll into balls.
    Press a small dent in each ball and insert half of a salted egg yolk. Re-roll to enclose.Forming the Mooncakes:
    Roll Dough 1 and Dough 2 into equal-sized logs.
    Cut each log into equal pieces (about 12-15 pieces each).
    Flatten each piece of Dough 1, place a piece of Dough 2 inside, and wrap Dough 1 around Dough 2.
    Roll the combined dough into a spiral shape, flatten it, and wrap it around the filling.
    Baking:
    Preheat the oven to 180°C (356°F).
    Bake for 20-25 minutes until the crust is golden brown.Allow the mooncakes to cool before serving.
