Apple Greek Yogurt Burnt Cheese Cake

PART A – BURNT CHEESECAKE
PART B – GREEK YOGURT CHANTILLY
PART C –Â CARAMELIZE APPLE JELLY
PART D –Â APRICOT GLAZE
Method
PART A : BURNT CHEESECAKE
- Blend all ingredients at food processor to smooth. Sif the mixture for smoother texture.
- Pour the mixture into a 5 inch cake tin lined with parchment paper.
- Bake at 200°c for 20 to 25 mins. Broil for 2 to 3 mins is optional.
PART B: GREEK YOGURT CHANTILLY
- Bloom gelatin with cold water and set aside.
- Hear up whipping cream(1) to melt sugar, add in bloom gelatin and stir until mix well homogeneous.
- Pour in cold whipping cream (2) and mx well. May use hand blend to smoothen the
- Keep the mixture in chiller overnight: Whipped up betore use.
PART C: CARAMELIZE APPLE JELLY
- Bloom gelatin and cold water, set aside.
- Caramelized sugar and add in butter.
- Slowly add in apple cube in low heat, follow by apple juice.
- Stir well petin set and sugar (2) before add in to the apple mixture.
- Keep stir and boiling the mixture until thickening.
- Remove from heat and add in bloom gelatin.
- Fill the mixture in desired mold and freezer atleast hours to unmold.
PART D: APRICOT GLAZE
- Boil all ingredients and use at 85 to 90 °c.
