Apple Greek Yogurt Burnt Cheese Cake

Package of ingredients to follow step by step

PART A – BURNT CHEESECAKE

  • BEGA TATURA Cream Cheese 250g
  • Sugar 80g
  • Egg 1nos
  • BEGA TATURA Yogurt 125g
  • Corn Flour 20g

PART B – GREEK YOGURT CHANTILLY

  • Whipping Cream (1) 100g
  • Sugar 35g
  • Gelatine Powder 4g
  • Greek Yogurt 3tsp
  • Cold Water 20g
  • Whipping Cream (2) 360g

PART C –  CARAMELIZE APPLE JELLY

  • Green/Red Apple Cube 180g
  • Sugar (1) 40g
  • BEGA TATURA Unsalted Butter 25g
  • Green Apple Juice 50g
  • Petin 5g
  • Sugar (2) 10g
  • Fish Gelatin 6g
  • Cold Water 30g

PART D –  APRICOT GLAZE

  • Apricot Gel 150g
  • Water 50g
  • Vanilla Pod (optional) 1/4 stick

Method

PART A : BURNT CHEESECAKE

  1. Blend all ingredients at food processor to smooth. Sif the mixture for smoother texture.
  2. Pour the mixture into a 5 inch cake tin lined with parchment paper.
  3. Bake at 200°c for 20 to 25 mins. Broil for 2 to 3 mins is optional.

PART B: GREEK YOGURT CHANTILLY

  1. Bloom gelatin with cold water and set aside.
  2. Hear up whipping cream(1) to melt sugar, add in bloom gelatin and stir until mix well homogeneous.
  3. Pour in cold whipping cream (2) and mx well. May use hand blend to smoothen the
  4. Keep the mixture in chiller overnight: Whipped up betore use.

PART C: CARAMELIZE APPLE JELLY

  1. Bloom gelatin and cold water, set aside.
  2. Caramelized sugar and add in butter.
  3. Slowly add in apple cube in low heat, follow by apple juice.
  4. Stir well petin set and sugar (2) before add in to the apple mixture.
  5. Keep stir and boiling the mixture until thickening.
  6. Remove from heat and add in bloom gelatin.
  7. Fill the mixture in desired mold and freezer atleast hours to unmold.

PART D: APRICOT GLAZE

  1. Boil all ingredients and use at 85 to 90 °c.
