Mango Apricot Ping Pi

Method
- Cut the apricot into cube. Add butter with water and egg yellow colour, cook until well dissolve.
- Add in HOI Mango Ping Pi flour info mixer.
- Beat with high speed until smooth dough form.
- Wrap the dough with catering film & chill at 0°C – 5°C for 1 hour.
- Mix apricot with white lotus low sugar paste. Weigh 30g of dough each.
- Dust a little flour on the dough, wrap the filling with dough & shape into ball.
- Use mooncake mould 65g for this recipe.
- Put the dough inside the plunger & press down until you feel resistance.
- Keep the mooncake chill for better taste. Enjoys.
