Earl Grey Ping Pi Mooncake

Package of ingredients to follow step by step
  • LURPAK Unsalted Butter 18g
  • Earl Grey Ping Pi Flour 250g
  • Water 190g
  • FL H.K White Lotus 1kg
  • Pumpkin Seed 50g
  • Mooncake Mould 125g
  • Salted Egg Yolk


  1. Steam salted egg yolk and reserve.
  2. Prepare 190g of boiled water (95°C-100°C) and dissolve 15g of unsalted butter / shortening into boiled water. Water temperature maintained at 95°C-100°C.
  3. Add in Earl Grey Ping Pi Flour and Boiled water with butter into mixer and beat with high speed until smooth dough form.
  4. Wrap the dough with food wrapping film & chill for 1 hour.
  5. Mix pumpkin seed with FL H.K White Lotus paste, scale 40g of paste each and wrap the salted egg yolk with mooncake paste. Shape into ball.
  6. Scale the dough 65g each. Dust a little flour (Koh Fan) and flatten the dough, wrap the filling with the dough and shape into ball.
  7. Use mooncake mould 125g for this recipe and put the dough inside the plunger, press down until you feel resistance.
  8. Keep the mooncake chill for better taste. Enjoy.
