Red Velvet Fruit Cake

Package of ingredients to follow step by step
  • Lurpak butter 140gm
  • Red Velvet Pound Cake Mix - 275gm
  • Apricot - 150gm
  • Imauco Glycerin - 150gm
  • Mix fruits 150gm
  • Egg 150g
  • Imauco Rum -5gm
  • 9.5" Loaf Pan

Method

  1. Cut Apricot into small pieces
  2. Combine apricot and mixed fruits in a mixing bowl.
  3. Add in glycerine and rum flavour.
  4. Soak the mixed fruits mixture in a glass jar for 1 hour.
    (Ideally 24 hours prior to preparing the fruit cake batter)
  5. Drain the mixed fruits mixture and set aside.
  6. Beat Lurpak butter and Red velvet pound cake mixwith medium speed.
  7. Slowly add in egg.
  8. Toss the mixed fruits with all purpose flour. Add it into the batter and mix well.
  9. Pour the batter into 9.5″ loaf pan.
  10. Bake at 150°C-160°C for 35-40 minutes.
  11. Enjoys!
