Red Velvet Fruit Cake

Method
- Cut Apricot into small pieces
- Combine apricot and mixed fruits in a mixing bowl.
- Add in glycerine and rum flavour.
- Soak the mixed fruits mixture in a glass jar for 1 hour.
(Ideally 24 hours prior to preparing the fruit cake batter) - Drain the mixed fruits mixture and set aside.
- Beat Lurpak butter and Red velvet pound cake mixwith medium speed.
- Slowly add in egg.
- Toss the mixed fruits with all purpose flour. Add it into the batter and mix well.
- Pour the batter into 9.5″ loaf pan.
- Bake at 150°C-160°C for 35-40 minutes.
