Mango Apricot Ping Pi

Package of ingredients to follow step by step
  • LURPAK Unsalted Butter 18g
  • Water 240g
  • IMAUCO Egg Yellow Colour
  • HOIBI White Lotus Low Sugar Paste 500g
  • Apricot 100g
  • Mooncake Mould 65g
  • HOl Mango Ping Pi Flour 1kg

Method

  1. Cut the apricot into cube. Add butter with water and egg yellow colour, cook until well dissolve.
  2. Add in HOI Mango Ping Pi flour info mixer.
  3. Beat with high speed until smooth dough form.
  4. Wrap the dough with catering film & chill at 0°C – 5°C for 1 hour.
  5. Mix apricot with white lotus low sugar paste. Weigh 30g of dough each.
  6. Dust a little flour on the dough, wrap the filling with dough & shape into ball.
  7. Use mooncake mould 65g for this recipe.
  8. Put the dough inside the plunger & press down until you feel resistance.
  9. Keep the mooncake chill for better taste. Enjoys.
