Berry Fruit Cake

Package of ingredients to follow step by step
  • Tropical Instant Cake Mix 250g
  • Lurpak Unsalted Butter 88g
  • EuroNatra Berry Couverture 50g
  • Ponthier Frozen Blueberries 120g
  • Hoibi Dried Apricot 50g
  • Hoibi Cranberries 50g
  • Egg 138g
  • 9”x3.5"x3" Loaf Tin
  • Parchment Paper

Method

  1. Cut the Dried Apricot in a small pieces.
  2. Break the Berry Couverture apart.
  3. Double boil Lurpak Butter then set aside.
  4. Add in Blueberries, Apricot, Berry Couverture and Cranberries in the Mixer and mix until well combined.
  5. After that, add in Tropical Instant Cake Mix, Egg and Lurpak Butter beat until well mix.
  6. Pour the cake batter in loaf tin (9″x3.5″x3″) and spread evenly.
  7. Preheat the oven at 160°C and bake at 150°C – 160°C around 50-60 minutes.
  8. Set aside and rest in room temperature for about 30 minutes and enjoy.
