Blueberry Sticky Toffee Pudding

Package of ingredients to follow step by step

A. Soaked Fruits

  • USA Dried Blueberry 150g
  • Chestnut Kernel (chopped) 100g
  • Raisin 35g
  • Dried Apricot 35g
  • Water 250g
  • Brown Sugar 80g
  • Vanilla Essence 1/2tsp
  • Orange Zest 3g

B. Baked Toffee Pudding

Part A

  • Pitted Date 125g
  • Baking Soda 0.5g
  • Boiling Water 150g

Part B

  • Salted Butter (softened) 60g
  • Gula Merah 40g
  • Gula Apong Granulate 40g
  • Golden Syrup 30g
  • Egg 2nos
  • Vanilla Essence 1/2tsp
  • Baker's Choice Flour 145g
  • Santan Powder 30g
  • Baking Powder 3.5g
  • Yogurt 20g

C. Blueberry Syrup

  • Strained Soaked Fruit Syrup 200g
  • Sakuma Bros Blueberry IQF 100g

Method

A. Soaked Fruits

1. Didihkan air bersama brown sugar, vanilla essence dan orange zest sehingga gula larut sepenuhnya.
2. Tuangkan campuran panas tadi ke atas dried blueberry, chestnut, raisin dan dried apricot.
3. Tutup dan biarkan rendam semalaman supaya buah menyerap rasa sepenuhnya.
4. Keesokan hari, tapis dan asingkan buah serta sirapnya. Simpan kedua-duanya untuk digunakan kemudian.

B. Baked Toffee Pudding

1. Untuk Part A, tuangkan boiling water ke atas pitted date dan baking soda. Biarkan sehingga kurma menjadi lembut dan teksturnya hampir seperti pes.
2. Dalam mixing bowl lain, pukul salted butter bersama gula merah, gula apong dan golden syrup sehingga sebati dan sedikit ringan.
3. Masukkan egg satu per satu bersama vanilla essence. Pukul hingga campuran homogen dan licin.
4. Masukkan semua bahan kering (AP flour, santan powder dan baking powder). Gaul perlahan sehingga sebati.
5. Tambahkan yogurt dan gaul sebati – langkah ini membantu meneutralkan rasa metallic daripada baking soda serta memberi kelembutan pada tekstur.
6. Masukkan pes kurma tadi dan gaul rata.
7. Pipe atau tuang adunan ke dalam bekas tahan panas sehingga separuh penuh. Taburkan sedikit soaked fruits, kemudian tutup semula dengan adunan sehingga 80% penuh.
8. Bakar pada suhu 175°C selama 20-25 minit, bergantung kepada saiz bekas, sehingga masak sepenuhnya.

C. Blueberry Syrup

1. Satukan strained soaked fruit syrup dan blueberry IQF dalam saucepan.
2. Masak sehingga mendidih dan sedikit pekat.
3. Curahkan sirap panas ke atas pudding yang telah masak sebelum dihidangkan.
