Choco Hazel Barquette

Package of ingredients to follow step by step

A. EARL GREY COOKIE DOUGH

  • Salted Butter (cubed) 160g
  • Castor Sugar 30g
  • Icing Sugar 30g
  • Egg 26g (about half nos)
  • Vanilla Essence 1/2tsp
  • All-Purpose Flour 180g
  • Ground Almond 50g
  • Earl Grey Powder 7g

B. CRISPY CHOCOLATE 

  • Almond Nibs 150g
  • Crispy Cereal Flake 70g
  • Salted Butter 30g
  • Le Bourne Dark Compound 185g

C. FILLING 

  • Le Bourne Choc Hazelnut Paste 300g

D. COATING / GARNISH

  • Le Bourne White Compound 150g
  • Le Bourne Milk Compound 400g
  • Le Bourne Compound Stick 6-8pcs

A. EARL GREY COOKIE DOUGH
1. Pukul butter sejuk, castor sugar, dan icing sugar sehingga sebati.
2. Masukkan telur dan vanilla essence, gaul sehingga rata.
3. Tambahkan semua bahan kering dan gaul sehingga menjadi doh yang lembut dan licin.
4. Canai doh setebal 4mm dan potong menggunakan acuan barquette cookies.
5. Letakkan 1/2 batang chocolate stick di atas separuh daripada cookies. Separuh lagi biarkan tanpa chocolate stick.
6. Bakar pada suhu 150°C selama 12-14 minit, bergantung kepada saiz cookies.

B. CRISPY CHOCOLATE
1. Cairkan dark compound chocolate dan masukkan butter, kacau hingga sebati.
2. Masukkan baki bahan dan gaul sehingga semua bahan bercampur rata.
3. Ratakan campuran setebal 3mm, kemudian potong mengikut saiz dan bentuk cookies. Tebuk bahagian tengah untuk menghasilkan lubang (barquette no.2).

ASSEMBLING

1. Letakkan lapisan crispy chocolate yang mempunyai lubang di atas cookie yang tidak mempunyai chocolate stick.
2. Paipkan chocolate hazelnut paste di bahagian tengah.
3. Tutup dengan cookie yang mempunyai chocolate stick sebagai sandwich.
4. Celup bahagian atas cookie dengan milk chocolate yang telah dicairkan dan hias dengan white chocolate mengikut citarasa.
