Like A Tiramisu

Package of ingredients to follow step by step

Biscuit Cuillere

  • Low Protein Flour 90g
  • Cornstarch 90g
  • Egg White 254g
  • Sugar 180g
  • Egg Yolk 144g
  • Prova Vanilla Extract (A splash)

Mousse Sabayon Tiramisu

  • Sugar 135g
  • Water 40g
  • Egg Yolk 73g
  • Prova Vanilla Extract (A splash)
  • Fish Gelatin 4g
  • Cold Water 20g
  • Candia Gourmet Cream 40% 190g
  • Candia Professional Signature Whipping Cream 35% 290g

Coffee to Soak the Sponge

  • Exelso Java Arabica 60g
  • Hot Water 300g

Vanilla Chantilly

  • Candia Gourmet Cream 40% 250g
  • Icing Sugar 25g
  • Prova Vanilla Extract (A Splash)

Method

Biscuit Cuillere

  1. Sift all powder together, whisk together white eggs and sugar until you obtain a meringue.
  2. Incorporate into the meringue slowly the yolk and then the powders.
  3. Pipe into lady finger silicon mold 1cm tall and bake at 180C for 15-16minutes.

Mousse Sabayon Tiramisu

  1. In a pan cook the sugar and water at 121C, add on top of the yolk in a mixer bowl and whisk.
  2. Add the gelatin and let it cool down while mixing into the mixer.
  3. At 40C incorporate delicately the whipped cream whipped like a mousse texture 60% and then pour on top of the whipped gourmet cream (should be whipped as firm texture (80%), mix gently until you obtain a smooth texture. Ready for use.

Coffee to soak the Sponge

  1. Boil all ingredients and set aside to cool down.

Vanilla Chantilly

  1. Whip all ingredients to soft peak.
  2. Pipe immediately.
