Blueberry Lemon Yogurt Cake

Package of ingredients to follow step by step

Bahagian A

  • Candia Unsalted Butter 250g
  • Castor Sugar 200g

Bahagian B

  • Eggs 3 nos
  • Vanilla Flavour 8g

Bahagian C

  • Yoghurt 240g
  • Lemons (zest & juice) 2 nos

Bahagian D

  • Low Protein Flour 350g
  • Baking Powder 10g
  • Baking Soda 3g
  • Salt 8g

Bahagian E

  • IQF Blueberries 250g
  • Low Protein Flour (Coating) 50g

Bahagian F: Lemon Glaze

  • Lemon (Zest & Juice) 1 nos
  • Icing Sugar (sifted) 150g

Method

  1. Pukul unsalted butter dan gula hingga kembang dan gebu.
  2. Masukkan telur dan vanilla flavour satu per satu, kacau sebati selepas setiap penambahan.
  3. Dalam mangkuk berasingan, sediakan Campuran Yogurt dengan mencampurkan yogurt bersama lemon zest dan jus lemon.
  4. Ayak Bahan D (Low Protein Flour, Baking Powder, Baking Soda, Salt) untuk memastikan ia sebati dengan sekata.
  5. Masukkan secara berselang-seli Bahan D dan Campuran Yogurt ke dalam adunan telur dan vanilla flavour.
  6. Salutkan blueberry IQF dengan low protein flour untuk mengelakkan ia mendap, kemudian campur dan kacau perlahan-lahan ke dalam adunan.
  7. Bakar pada suhu 180°C (haba atas/bawah) selama 50-55 minit atau sehingga kek masak sepenuhnya.
  8. Untuk Lemon Glaze, campur lemon zest, jus lemon dan gula aising hingga sebati. Tuang ke atas kek yang telah sejuk sebelum dihidangkan.
